Pumpkin Oatmeal Bars
10 oz pumpkin puree
2 TBS flour
1 scoop protein powder (vanilla or plain)
3 TBS truvia, stevia, splenda, etc
1/2 c oatmeal (dry)
3 egg whites
1/8 tsp bakin powder
Preheat oven to 375.
In a medium mixing bowl, whisk 3 egg whites until fluffy.
Add oatmeal, whisk.
Add remaining ingredients, the order does not matter, and whisk.
When well mixed, spray a muffin pan with no stick cooking spray.
Spoon the batter into each cup
Bake at 375 for 20 minutes
**Even though they are baked in muffin cups, these are not intended to be muffins! You will find the texture to be much different-- but every bit as delicious!
