"Diet" Taco Salad

Part 1: The ground chicken (makes enough for 4 servings)
Part 2: The salad (makes 1 serving)

1 pound ground, 99% lean chicken or turkey
1/2 TBS chili powder
1/2 cup salsa

Heat a med/large pot on the stove on a high heat setting.
After heating for 2 minutes, spray with non stick cooking spray.
Dump ground meat into the pot
Mix and chop the meat with a large wooden spoon or a pancake flipper (lol) until the meat has all changed lighter in color, and no visible pink remains. You may want to turn the heat down a bit before doing this.
Add chili powder and salsa to the meat, stir for 5 minutes.
Turn off the stove and let sit-- you'll need the meat in a few  minutes!

1 c lettuce shreds
1/2 a tomato, chopped.
1/4 avocado, chopped
2 TBS low fat cheddar
1/3 cup ground chicken taco mix (that you just made!)
1 TBS Plain 0% fat greek yogurt

In a serving dish, add lettuce, tomato, and avocado. Mix so that each part is evenly distributed.
Top with the chicken
Sprinkle the cheddar over the chicken
Top with the greek yogurt
Serve & Enjoy! :)
