Angel Food Cake Protein Pancakes
1/2 c egg whites
1 TBS flour
1 scoop vanilla whey
1/2 tsp baking powder
1 packet truvia (1 tsp)
In a medium/large mixing bowl, add eggwhites and begin to beat on a medium/high speed. (like an 8/10) Beat for 2 minutes, when soft white peaks begin to form.
In a small bowl, mix your dry ingredients.
Once the egg whites are whipped, slow the speed of the mixer, and sift the dry ingredients into the mixing bowl slowly.
When all the dry ingredients are sifted into the whipped egg whites, continue to beat on high for 15-30s.
Spray a hot skillet with no stick cooking spray.
Dollop the batter onto the skillet and form into a pancake shape.
After about 45s, flip and cook the other side.
Add your favorite clean toppings, and enjoy!
Makes 10 3in pancakes or 3-4 6in pancakes!
